素菜粿(附捏皮步骤图)

老坤的舅父舅母就在离家远丁点的大巴杀做鱼的买卖。。。之前一直想帮衬他们,可每次去到,他们都非常慷慨大方的不收钱。。。好几次了,又拿又送的。。。搞得莎莎十分非常尬尴!!

莎莎也不好意思到那巴杀去逛了。。。即使去,都得“偷偷摸摸”做贼似的。。不敢经过舅父舅母的鱼档。。。。实在于心有愧!!本该做晚辈的,理应上前打个招呼,让小孩子们逗下舅父舅母开心的~~ 好矛盾的。。。心里超级不舒服的。。。。

看来。。。下回再逛那巴杀,莎莎应该去舅父舅母的档口,打个招呼慰问一下。。。可是,如果舅父舅母又把鱼儿往莎莎塞,哪该怎么办啊???困局中。。。。。


刚好碰到国际素食日,就来个素菜粿吧!!做了原食谱的双倍份量!!合适极了。。。不然不够吃。。。也不够分给妈妈吃~~ 嘻嘻嘻!!!
还未玩过菜粿,却想试试看的孩子们,建议还是照着原食谱的分量来玩玩吧~~~

莎莎也尝学用花花娘子的“袋子法,可莎莎捏不成。。。再慢慢研究研究哈!!
so,这次用回莎莎之前捏饺子的方法来捏吧~~~ 希望官们也欢喜这素粿子呀!!

方子是从幸福的Bernice家找的。。。面团的操作是蛮简易~~

馅料:
沙葛丝、萝卜丝、小葱头碎、豆干粒、耗油、海盐、糖。

1. 先热油锅,爆香小葱头碎。
2. 加入萝卜丝炒至稍微转色后,加入豆干粒已经沙葛丝,继续炒匀。
3. 以耗油、海盐和少许糖调味,即可盛起。


粿皮材料与做法:
澄粉 (wheat flour) 100g、薯粉 (potato flour) 60g、盐 1tsp、油 1tbsp、滚开水 220g。

1. 先将粉类与盐稍微混合后,待开水一沸腾,立即倒入粉料中。
2. 快速用刮刀混合均匀成团后,加入油揉捏成Q韧有弹性的面团。
3. 静置待面团完全冷却后,搓成长条,分割成小面团。
4. 把小面团稍微滚圆后,压扁成圆形。再用捍面棍,捍薄圆形。
5. 包入馅料,捏紧收口。
6. 排入已防沾烤盘,送入已预热的蒸锅。
7. 大火蒸6-7分钟,在粿皮上涂抹一层薄薄的油即可。

  5. Aiyoh, your dumplings were wrapped so "sui!" You are very pandai, Sabrina! Eh, thanks for sharing the pictures as to how to wrap the dumplings. How I wished that I looked at these pictures first b4 I wrapped my dumplings just now, hai, my dumplings are soooooooo ugly but I think I know why I couldn't get a nice shape. I notice that you folded the skin vertically(straight) whereas I folded mine on the side & becoz I stretched it until 8 folds, they all look fat & short, hahaha! Next year will try your wrapping method. I only finished wrapping the dumplings by 10.3opm, very tire liao, tomorrow only steam my dumplings.
